When it comes to food, a fatty is minced meat and other ingredients rolled up with a weave of bacon. This time we used elk meat and grilled the whole thing. More “making of” pics to follow.

  1. ….have to see the finished product!!!! Did you smoke this or just place it on the gas grill?? Inquiring minds want to know…. I’m looking for an additional meat to smoke along with the Thanksgiving Turkey….

    1. We placed the fatty on a gas grill that was kept on the low. There were some cuttings from an apple tree on the burner but I wouldn’t really call it smoking – grilled on a low flame might be the correct terminology here.

      I think this kind of thing would work very well smoked so you should give it a try for the family meal. And not much extra effort is required after you’ve rolled the fatty up since you’re already making the turkey.
